Is it possible to rename the word ‘initiative’ to anything else like ‘stage’? So each stage shows ‘Stage A’ and ‘Stage B’?

It sounds like you are using the Project Plan template, is this correct?
If so, you can simply double click the column header for column J to edit the data type settings for that column and change the column name to “Stage” or whatever you choose:
You can get to this same dialog by clicking the drop-down arrow in the column header, or by right clicking the column header, and choosing the “Edit data type” option:
