I am organizing a collaborator directory- basically a spreadsheet that tells each of our collaborators names, affiliations, what projects we work them with on. I have the “projects” column as a multi-select because many of our collaborators work with us on multiple projects. I need a way to then sort them by project

Stacking in Kanban views is designed to work only with Select, User, and Icon Set columns.
An alternate way to visualize what you are looking for is to use Grouping. For example, you could create a View that groups by your “projects” column and set the sorting as needed:
Multiselect columns are not supported in Kanban views because row cards would potentially appear in multiple columns.
