Can the spreadsheet interface language be changed? In this case I was looking to change the interface language to Chinese.

We do not currently support languages other than English. We do have several customers using translation browser plugins, but we have not tested the product with these and they are not formally supported.
We are planning to work toward multilingual support over the long term but this is not in our short term roadmap.
